FISSMAN KENSEI HANZO 8.2" Yanagiba Knife

In the heart of Seki, Japan, where the ancient art of blacksmithing has flourished for over 800 years, the FISSMAN KENSEI HANZO 8.2" Yanagiba knife is masterfully crafted for precision fish handling. Ideal for slicing boneless fillets for sushi and sashimi, this traditional Japanese knife features single-sided sharpening with a concave back surface (Urasuki) and a front bevel (Shinogi) for effortless cutting and separation. The narrow, sharp blade reduces the effort required for delicate tasks like skinning and filleting.

The high-carbon AUS-8 steel blade is cold-hardened using Korudo technology, ensuring corrosion resistance and exceptional durability at 58 +/- 2 HRC. Each knife is manually sharpened on a 6000-grit water whetstone for razor-sharp precision, with a 15-17 degree edge angle per side. The natural wood handle, crafted following traditional Japanese methods, provides a comfortable and elegant grip.

Care Instructions: Hand wash only, immediately dry after cleaning. Use a whetstone for sharpening and avoid leaving the knife wet for extended periods. Not dishwasher safe.
